Orange Essence

Orange essence (Erken 1914): strips of orange peel are steeped for 2 months in cognac or vinegar; 3 dl of this essence is mixed into a cold sugar syrup of 1 l water, 1 kg sugar and 30 g citric acid.

About the dish

From the preserving chapter of Stor kokebok (1914). The essence itself — orange peel steeped in cognac or vinegar for two months — was made in advance and used to flavor sugar syrup, drinks and desserts.

How to make it

    Make the essence

    Wash the oranges, cut away all the white of the peel and cut the peel into quite fine strips. Put the strips into bottles and pour cognac (or vinegar) over so it stands well above them. Let stand for 2 months.

    Boil the sugar syrup

    Boil the water and sugar, skim off the foam and strain the syrup.

    Add the citric acid

    When the syrup is cold, add the citric acid dissolved in 0.5 dl hot water.

    Mix in the essence

    Add 3 dl orange essence to the cold mixture and pour into bottles.

Changes from the original

"Del." interpreted as deciliters. The amount of orange peel and cognac is not given in the original and is therefore left without a measure. The steps have been modernized in language.

The recipe is clear that both the citric acid and the essence are added to a cold mixture. Heat would drive off the volatile aromatic compounds from the orange peel and weaken the flavor.
