Pineapple with Vanilla Rice

Erken's molded dessert from 1914 in which a mold is lined with pineapple slices and filled with vanilla-cooked rice pudding with egg yolks, apples, bananas, and custard, chilled and turned out.

About the dish

From the dessert chapter of 'Stor kokebok' (1914). An elaborate molded dessert in which canned pineapple was a modern luxury in Norwegian homes in the early 1900s.

How to make it

    Cut the pineapple

    Cut the pineapple vertically into two halves, then cut each half straight down into thin slices.

    Line the mold

    Rinse a fairly tall, straight-sided mold with cold water and dust it with sugar. Line the mold with the pineapple slices so they overlap slightly; line the bottom as well.

    Parboil the rice

    Rinse the rice in cold water and set it over the heat with plenty of cold water. As soon as the water boils, pour it off.

    Cook the rice pudding

    Add the rice to the boiling milk, then add the sugar, salt, butter, and vanilla. Stir until it comes to a boil, put on the lid, and place the pot in a hot oven (about 160 °C (320 °F)) for 25 minutes without stirring.

    Stir in the egg yolks

    Stir the 8 egg yolks into the rice with a fork, one at a time.

    Make the custard

    Bring the sugar and milk to a boil and pour it little by little over the beaten egg yolks, whisking constantly.

    Fill the mold

    Fill the vanilla rice into the mold and make a hollow in the middle. Fill the hollow with a mixture of cooked, sliced apples, bananas, and 1 tablespoon of finely cut pineapple, plus the custard. Cover with the rest of the vanilla rice.

    Chill and serve

    Let the dessert stand cold for 3–4 hours. Turn it out onto a platter and surround it with halved, sliced bananas and pineapple slices.

Why should the rice be parboiled in water first?
