About the dish

An English-inspired small dish from the chapter "Hot and cold small dishes" in Stor kokebok (1914). Melted cheese with milk or beer and seasonings is laid over toasted white-bread slices – an early Norwegian version of the classic British dish.

How to make it

    Melt the cheese

Cut the cheese into small pieces and put it in a pot together with the butter, milk or beer, and the seasonings.

  2. 2

    Stir until it thickens

Stir over quite low heat until the mixture thickens.

  3. 3

    Toast the bread

Toast slices of white bread, cut them into not-too-large squares, and spread them with good butter.

  4. 4

    Plate

Lay the cheese mixture over the toasted bread slices and serve at once.

Changes from the original

Measurements have been modernized (grams, tablespoons), and the amounts for salt, mustard, and paprika are given as "to taste" since the original gives no quantity. The method has been split into numbered steps with modernized language; the French loaf has been kept as the designation.

Frequently asked questions

Which liquid do I use – milk or beer?
Either works. The recipe calls for 3 tablespoons of milk or beer. Beer gives a fuller, more tangy flavor, milk a milder result.
How do I keep the cheese mixture from separating?
Cut the cheese into small pieces and stir the mixture over quite low heat until it just thickens. Too high heat makes the cheese separate and turn stringy.
How is the dish served?
On freshly toasted white-bread slices cut into not-too-large squares, spread with good butter. The cheese mixture is laid over and the dish is served at once, while it is hot.
Which spices are used?
Salt, mustard, and paprika are stirred into the cheese mixture together with the butter (15 g) and the liquid.
