Vanilla Nuts (Vaniljenøtter)

Vaniljenøtter ("vanilla nuts") are small round Norwegian cookies made from 4 eggs, 350 g sugar, 350 g flour, 60 g ground almonds, and vanilla sugar, rolled into balls and baked pale golden in a moderate oven.

About the dish

Simple egg-rich cookies from the baking chapter. The long beating time stood in for today's electric stand mixers; with a machine, a few minutes is enough.

How to make it

    Beat eggs and sugar

    Beat the eggs and sugar until pale and fluffy — in the original half an hour by hand, or 8–10 minutes with a stand mixer.

    Mix the dough

    Add the blanched, ground almonds, the vanilla sugar, and the flour. Work the dough together well.

    Roll into balls

    Roll the dough into round balls and place them on a greased baking sheet, spaced slightly apart.

    Bake

    Bake the cookies pale golden in a not-too-hot oven, about 160 °C (320 °F), for 10–12 minutes. Cool on a rack.
