German potatoes from Erken's Stor kokebok 1914: raw potatoes in slices cooked tender in meat stock, tossed in cold parsley butter with lemon juice, served with fried fish or salted meat.

A simple potato dish from the chapter on root vegetables and greens in 'Stor kokebok' (1914). Raw potatoes are cooked in meat stock and tossed in a cold parsley butter with lemon – a thrifty way to use the stock from boiled meat.
Peel and cut the potatoes
Peel the raw potatoes and cut them into slices or strips.
Cook in stock
Put the potatoes in boiling meat stock, or in boiling salted water if you have no stock. Cook until tender, but watch that they do not cook to pieces.
Drain
Stir in the pepper just before the potatoes are drained, and let the stock run off.
Parsley butter
Stir the cold butter together with the finely chopped parsley and add the lemon juice.
Combine and serve
Toss the drained potatoes in the parsley butter. Serve with fried fish or with salted sausage and meat.
'4 del.' is interpreted as 4 dl, 'knivsod' as a knife-tip. Quantities are structured in modern units, and the method is divided into steps in modern Norwegian.
