Marinating in red wine and serving fruit jelly alongside make the pork resemble game, as the title says.
Lard and marinate
Remove all fat and membrane from the tenderloins. Lard them with fine strips of pork belly. Put the meat in red wine with onion, parsley, celery leaves, pepper and salt and leave overnight.
Brown and braise
Take the meat out, pat it lightly dry and brown it in butter. Pour the wine into the pan little by little together with ½ l meat stock. Braise in the oven or over low heat for about ½ hour.
Make the sauce
Brown 60 g butter, stir in 40 g flour and thin with the stock from the meat and 1 dl cream. Boil the sauce well together.
Serve
Pour the sauce over the tenderloin when serving. Serve with fried tomatoes, pea purée, fried potatoes and fruit jelly.
«Spesialiseres» (damaged characters) is read as «spedes» (thinned). The overnight marinating is counted in the total time but not in active time. «Del.» is converted to dl.
