About the dish

A slightly richer variant of scraped beef, in which an egg yolk is stirred into the meat pulp. Erken considered both eggs and scraped meat especially nourishing and easily digestible for patients.

How to make it

    Scrape the meat

    Pat the meat dry, cut it into slices across the muscle fibers, and scrape off the meat pulp with a knife.

    Mix in egg and salt

    Stir the egg yolk and salt into the scraped meat and form it into small round patties.

    Fry

    Fry the patties quickly in butter in a hot pan and serve at once.
