About the dish

A warm savoury where tomato and cheese soften the saltiness of the fish. It is served immediately.

How to make it

  1. 1

    Fry the bread

Fry the bread slices in butter, as explained earlier in the book.

  2. 2

    Make the tomato mixture

Press the tomatoes through a fine sieve and heat them in a small pan. When boiling hot, stir in the rice flour mixed with a little cold tomato juice. Season and add the cheese.

  3. 3

    Top the bread

Spread the tomato mixture on the fried bread. Lay the sardine fillet on top, free of bones and skin if you like, and add a little more tomato on top.

  4. 4

    Bake

    Place in a hot oven (about 200 °C (390 °F) / 390 °F) for 5 minutes. Serve at once.

Changes from the original

«Hot oven» is read as about 200 °C (390 °F). «As explained before» is briefly explained; the fish may be boned and skinned.
