About the dish

Extract here means pure juice, with or without sugar, but without water. The berry residue is used on in jam, soup, porridge or cream.

How to make it

  1. 1

    Set up the juicer

Pour 3 litres of water into the lower part of the steam juicer. Insert the stand and in it the strainer and filter cloth. Clean the berries but preferably do not let them touch water. Wipe rhubarb with a damp cloth, do not wash or peel it, cut it in small pieces and layer with sugar. A little lemon zest is good.

  2. 2

    Layer

Layer the fruit and sugar on the cloth. Put on the lid.

  3. 3

    Steam out the juice

Set the apparatus over the heat and let it cook for ¾ hour. Pour the juice straight into bottles, cork and cover. The berry residue can be made into jam, or used at once for soup, porridge or cream.

  4. 4

    Sugar per kg

    Strawberries 300 g sugar (preferably demerara), raspberries 300 g, redcurrants 400 g, blackcurrants 200 g, blueberries 200 g, cherries 200 g, gooseberries 300 g, apples 100 g, rhubarb 200 g. A mix of ⅔ raspberries and ⅓ redcurrants gives excellent extract (300 g sugar per kg). So do 9/10 gooseberries and 1/10 blackcurrants, and 9/10 apples and 1/10 rowanberries (100–200 g sugar).

  5. 5

    Sterilise

As soon as the extract is bottled, cork the bottles, cover and sterilise at 60 °C (140 °F) for ½ hour. Sterilise again at 60 °C (140 °F) for ½ hour. Seal with lacquer when the bottles are cool. Note: 60 °C (140 °F) is mild by today's standards. Store the juice cool and dark and use it soon, or heat it to at least 85 °C (185 °F) to keep longer.

Changes from the original

Measures are converted to modern units and the sugar amounts gathered in one step. The last step adds a note on today's advice for sterilising.
