Fry the cubes
Fry the potato and ham cubes in the butter.

Add the eggs
Pour over the whisked eggs, season with salt and pepper, and stir slowly, preferably with a fork, until the eggs set.

Serve
The omelette should not be turned. Slide it onto a suitable dish and sprinkle finely snipped chives over it.
