Potato Frikadeller

Potato frikadeller (small potato cakes) from Erken 1914: 500 g of riced boiled potatoes mixed with 60 g grated white bread soaked in 3 tbsp milk, one egg, salt, and pepper. Formed into small cakes, fried in butter, and served with brown sauce.

About the dish

A thrifty leftover dish from the vegetable chapter of "Stor kokebok" (1914): boiled potatoes from the day before become small fried cakes with brown sauce.

How to make it

    Soak the bread

    Grate the white bread and let the crumbs soak in the milk.

    Mix the dough

    Press the boiled potatoes through a ricer and mix them with the bread, the egg, salt, and pepper.

    Form and fry

    Form small round cakes and fry them golden in butter over medium heat, about 3–4 minutes on each side.

    Serve with brown sauce.
