Cheese and anchovy canapés from Erken 1914: finger-thick slices of white bread generously spread with butter creamed with 60 g grated cheese and a hard-boiled egg yolk, covered with a double cross of anchovy and the openings filled with garnishing jelly, salad or hard-boiled egg.
Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 5 (falt i det fri)
An elegant cold canapé from "Hot and cold small dishes" in Erken's "Stor kokebok" (1914). Garnishing jelly made from stock was a common decoration on party canapés.
Cheese butter
Cream the butter soft and mix it well with the grated cheese and mashed hard-boiled egg yolk.
Spread the bread
Spread the small, finger-thick slices of white bread generously with the cheese butter.
Anchovy cross
Lay strips of cleaned anchovy in a double cross over each slice.
Garnish
Fill the openings between the anchovy strips with a little finely chopped garnishing jelly, finely cut salad or hard-boiled egg.
The amount of bread and anchovy is estimated; measures have been modernized. "Egg yolk" is rendered as egg yolk.
