"Omelette aux fines herbes" as given by Erken (1914). In the narrow ingredient column the teaspoon measure is written only once and also applies to the chervil and tarragon.
Brown the butter
Heat the butter in the frying pan until it gives off the familiar nutty aroma.
Mix eggs and herbs
Whisk the eggs, season with salt and pepper, and stir in the chopped herbs and leek.
Fry and roll
Pour the mixture into the pan, stir quickly with a fork and fry the omelette rapidly. Roll it up and turn it out onto a warm platter.
The measure "teaspoon" has been added for the chervil and tarragon, as the original's column layout implies. The leek is specified as one small leek, finely chopped. The method has been divided into numbered steps.
