Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Sugar is melted to caramel, blanched almonds stirred in until light brown, cooled on an oiled platter and crushed into nougat powder (praline powder) that is stored dry.

Melt the sugar
Melt the sugar in a pan until it is light yellow.
Add the almonds
Put the blanched almonds in the caramel and stir until the mass is light brown.
Cool
Pour the mass out onto a platter brushed with oil, and let the nougat become completely cold.
Crush
Crush or grind the cold nougat into powder. Store it in a tight box in a dry place.
"Pounded sugar" is rendered as sugar, and "pounded" as crushed/ground. The quantities have been kept.
