About the dish

Cloudberry preserve was one of the oldest and simplest ways of keeping cloudberries: the berries were cooked into a mash without sugar and sealed with cognac-dipped linen and a layer of tallow or paraffin. The method belongs to the preserving chapter, where Erken describes several ways of preserving cloudberries.

How to make it

  1. 1

    Clean the berries

Clean the cloudberries well of flower remnants, leaves, and unripe berries.

  2. 2

    Cook to a mash

Cook the berries, stirring constantly, until they break down and the mass becomes smooth like a mash.

  3. 3

    Fill the jars

Pour the boiling mash into warm, clean jars.

  4. 4

    Seal

When the mash is completely cold, lay a piece of linen dipped in cognac or wine spirits over the surface. Melt a layer of tallow or solid paraffin (modern: paraffin wax) over the cloth and cover the jar.

  5. 5

    Variation

You can also place a little of the cloudberry mash on top of the cloth; the cloth must then hang over the edges of the jar.

Changes from the original

Ingredient quantities are not given in the original; here they are stated by jar size. Tallow/paraffin is kept as the original's seal, but melted paraffin wax is mentioned as a modern alternative. The method is divided into numbered steps.

Note on Modernised

Frequently asked questions

What is cloudberry preserve in this recipe?
It is a simple preserving method from Schønberg Erken's "Stor kokebok" (Grand Cookbook, 1914, p. 594): cleaned cloudberries are cooked, stirring, until they become a mash, with no sugar in the mash itself, and filled into warm jars.
How are the jars sealed?
When the mash is completely cold, a piece of linen dipped in cognac or wine spirits is laid over it. Over this, a layer of tallow or solid paraffin is melted, and the jar is covered. The cloth should hang over the edge of the jar.
Why must the mash be cold before sealing?
Because the tallow or paraffin must be melted over the cloth and set into a tight layer; if the mash is warm, steam forms and the layer will not seal tightly. Note that paraffin/tallow as a seal is not recommended today — use clean, airtight jars instead.
How much does the recipe make?
It is calculated for about 8 servings, and the whole job takes around an hour including cooking and filling into jars.
