About the dish

A simple, cold almond pudding of the fromage type, set with gelatin and lightened with stiffly whipped cream. Erken recommends a red sauce (berry or fruit sauce) with it.

How to make it

  1. 1

    Preparations

Blanch and finely chop the almonds. Soak the gelatin in cold water until soft and dissolve it in 1/2 dl warm water.

  2. 2

    Boil the almond cream

Bring the finely chopped almonds, 2.5 dl cream, and the sugar to a boil.

  3. 3

    Add the gelatin

Stir the dissolved gelatin into the hot almond cream. Let the mixture cool well, but not set.

  4. 4

    Fold in the whipped cream

Whip the rest of the cream (3 dl) stiff and fold it gently into the mixture.

  5. 5

    Mold and serve

Fill the mixture into a moistened mold and chill until set, at least 4 hours. Turn the pudding out onto a platter and serve with a red sauce.

Changes from the original

Measurements converted to modern units (del. = dl). "Blanched, finely chopped almonds" kept as blanched, finely chopped almonds. The chilling time is estimated, since the original only says "well cooled."

Mål omregnet til moderne enheter (del. = dl). «Skoldede, finhakkede mandler» beholdt som skåldede, finhakkede mandler. Kjøletid er anslått, siden originalen bare sier «godt avkjølet».

Frequently asked questions

How is the cream divided in the recipe?
Of a total of 5 1/2 dl cream, 2 1/2 dl is boiled with the blanched, finely chopped almonds and the sugar. The rest (3 dl) is whipped stiff and folded in only once the mixture is well cooled — otherwise it collapses.
Why does the pudding take so long?
The preparation itself is quick, but the pudding needs several hours (count on about 5 hours in all) in the refrigerator or a cold place for the gelatin to set before it can be turned out of the mold.
How do I get the pudding out of the mold neatly?
Fill the mixture into a mold rinsed/moistened with cold water on the inside. Then the pudding releases more easily when you turn it out onto a platter. Serve with a red sauce, for example a berry sauce.
How much gelatin should be used, and how?
10 g gelatin is dissolved in 1/2 dl water and added to the hot cream-and-almond mixture after boiling, so it distributes evenly.
