Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 435 (falt i det fri)
One of several macaroni variations in the chapter on salads, omelets, and side dishes. Erken uses a classic white roux sauce (a butter-flour roux thinned with milk) as the creaming base.
Boil the macaroni
Break the macaroni into pieces about 4 cm long and boil it in boiling, salted water until tender, about 20 minutes. Pour it into a colander.
Make the sauce
Stir the butter and flour together, thin with the boiling milk, and let the sauce simmer for 5 minutes.
Fold together
Fold the boiled macaroni into the sauce. Season with salt and grated cheese, and serve.
'Dessert spoon' has been converted to a teaspoon/tablespoon measure (about 1 tablespoon), and the method has been divided into numbered steps in modern Norwegian.
