Raw liver drink was an old remedy for anaemic and weak patients. The dish shows how liver was used as concentrated nourishment in food for the sick.
Mince the liver
Put the liver through a mincer five times.
Mix and press
Mix the liver with the cold water and press it through a purée press. Add lemon juice.
Serve cold
Keep the drink cold and serve it cold.
Note
Note: The drink is made from raw liver. Raw liver can contain bacteria and is very rich in vitamin A, so pregnant women and small children should not drink it, and others should ask a doctor first.
'Gr.' and 'del.' are converted to g and dl. The amount of lemon juice is not given. The safety note about raw liver has been added.
