Original 1914 recipe

Erken's chicken supremes à la favorite from 1914: skinless chicken breasts are salted, floured, browned in clarified butter, brushed with egg, and finished in a hot oven, served with buttered chopped mushrooms and a light mushroom sauce. The recipe includes her general explanation of supremes and the three preparation methods (browned, light, steamed).

The recipe appears in the chapter on poultry and game, among a series of fine 'suprême' dishes of chicken breast with French names. Erken first explains what a fillet/suprême is, and the three basic ways of preparing them – browned, light, or steamed – before giving the dish itself, à la favorite, which is the browned version with mushroom sauce.
Cut out the supremes
Cut the breasts off the chickens along the breastbone and remove the skin. This gives you four supremes. Pat them dry well.
Season and flour
Sprinkle the supremes with fine salt and dredge them in wheat flour.
Brown in butter
Heat clarified butter in a sauté pan until it is hot but not browned, and add the supremes.
Brush and cook
Brush the supremes with beaten egg, place the pan in a hot oven (about 225 °C (435 °F)) for 10–15 minutes, and let them sauté on both sides until cooked through but still juicy.
The mushrooms
Chop the mushrooms and let them sweat in a little butter for a couple of minutes.
Plating
Place the supremes on a platter, arrange the mushrooms around them, and pour over a good, light mushroom sauce. Serve at once, or the meat easily turns tough.
Ingredient quantities are estimated and given in modern measures (dl, g, pcs), since the original only lists the ingredients. Clarified butter is kept, but can be replaced with ordinary butter or butter and oil. The oven temperature is given in degrees, and the method is divided into numbered steps in modern Norwegian.
