Original 1914 recipe

Currant Cake II from Erken 1914: a simpler creamed loaf cake with 2 eggs, 250 g sugar, 150 g butter, 500 g flour, 2.5 dl milk, currants, and candied peel, made like Currant Cake I.
Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 561 (falt i det fri)
A thriftier version of the currant cake with fewer eggs, leavened with baker's ammonia and flavored with candied peel. Erken refers to the method in Currant Cake I.
Cream butter and sugar
Cream the butter and sugar white, and stir in the egg yolks.
Mix in the rest
Add the milk, the currants, and the candied peel, and work in the sifted flour that the baker's ammonia (or baking powder) has been blended into.
Fold in the egg whites
Beat the egg whites stiff and fold them into the batter.
Bake
Put the batter in a greased and dusted pan and bake in a not-too-hot oven, about 170 °C (340 °F), for 45–55 minutes.
Measures modernized. The method has been written out in full (the original refers to Currant Cake I). Baker's ammonia has been kept with baking powder as an alternative.
