Currant Cake I from Erken 1914: a creamed loaf cake with 6 eggs, 500 g sugar, 200 g butter, 500 g flour, 2 dl milk, and 100 g currants, leavened with baking powder and stiffly beaten egg whites, baked in three pans.

About the dish

Currant cake was one of the most commonly made everyday and party cakes in Norwegian homes. Erken specifies three pans, a reminder that baking in 1914 was often done in large quantities for the whole week.

How to make it

    Cream butter and sugar

    Cream the butter and sugar white and airy.

    Add the egg yolks

    Stir in the egg yolks and beat the batter for about 10 minutes.

    Mix in milk, currants, and flour

    Add the milk and the currants, and work in the sifted flour blended with the baking powder.

    Fold in the egg whites

    Beat the egg whites stiff and gently fold them into the batter.

    Bake

    Divide the batter among 3 greased pans dusted with dried breadcrumbs or semolina. Bake in a not-too-hot oven, about 170 °C (340 °F), for 40–50 minutes until a cake tester comes out clean.
