Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Meat gratin/aubin (Erken 1914): a thick roux of 75 g butter, 75 g flour and 5 dl milk/stock is stirred with 500 g chopped boiled meat, anchovies, paprika, salt, 4 egg yolks and sherry; stiffly whipped whites are folded in, cooked in a mold in a water bath for 1.5 hours and served with a brown sharp sauce. An 'aubin' is Erken's term for a baked savory pudding.

A fine molded or gratin dish of boiled or roasted meat, cooked in a water bath. 'Aubin' is Erken's term for such puddings of a roux-based sauce with meat and egg.
Make the roux
Stir the butter and flour together, thin with boiling milk or meat stock and cook until the mixture pulls away from the pot.
Stir in meat and seasoning
Take the pot off the heat and stir in the meat, the cleaned and pasted anchovies as well as the paprika and salt.
Eggs and wine
Stir in the egg yolks one by one, then the sherry, and finally fold in the stiffly whipped egg whites.
Cook in a water bath
Pour everything into a greased and crumb-coated mold and cook in a water bath for 1 1/2 hours.
Serve
Serve with a brown, sharp sauce.
The milk amount is unclear in the OCR text and is set at 1/2 liter based on the amount of flour. 'Del.' is interpreted as deciliters. Anchovies can be replaced with jarred anchovy fillets. The steps have been split up for readability.
