Calf's Liver Cooked Like Steak

Calf's liver cut in thin slices, seasoned with salt and pepper, floured and fried in butter, served with finely cut fried onion. The liver is first soaked and placed 2 hours in vinegar water. It can alternatively be larded and prepared like braised beef.

About the dish

One of several ways Erken directs for calf's liver in "Stor kokebok" (1914): "Calf's liver is used in many ways: as game, steak, boneless birds, fricandeau, braised beef, etc." This variant is the simplest – thin slices fried in butter with fried onion.

How to make it

    Soak the liver

    Place the soaked liver in vinegar and water for 2 hours. Take it up and wipe it dry.

    Slice and season

    Cut the liver into thin slices and sprinkle with pepper and salt.

    Flour and fry

    Turn the slices in wheat flour and fry them in butter in a pan until cooked through but still juicy.

    Fried onion

    Fry finely cut onion soft and golden in butter and serve it with the liver slices.

    Variation

    The liver can also be larded with pork strips and prepared exactly like braised beef.
