Erken's 1914 recipe for calf's brain with black butter: the brains are cleaned, simmered 10 minutes in bouillon, cut into slices and drizzled with browned butter with parsley, pepper and vinegar. Garnished, if desired, with truffle and asparagus tips.

From the offal chapter of "Stor kokebok" (1914). Calf's brain with browned butter, vinegar and parsley is a classic French dish ("au beurre noir") that Erken brought into the finer repertoire of the Norwegian household.
Clean the brains
Wash the calf brains in salted water, remove membranes and veins, and dry them well.
Simmer in bouillon
Thin the bouillon with a little water, add the brains and let them simmer gently for 10 minutes. Take them out and let them drain and dry.
Brown the butter
Brown the butter lightly in a pan and stir in parsley, pepper and vinegar.
Plating
Cut the brains into slices, arrange them on a dish and pour the browned butter over.
Garnish
The slices can be arranged in a ring on the dish with a truffle slice on each, and boiled asparagus tips turned in melted butter placed in the middle. Serve hot.
Deciliters and teaspoons/tablespoons are given in modern measures (del. = dl). The method is divided into numbered steps and the language modernized. Truffle and asparagus are listed as optional garnish.
