Strawberry sorbet of 1 l half-frozen strawberry fruit ice stirred with 0.5 dl curaçao and 0.5 dl Sauternes, refrozen a few minutes and served at once in flat glasses.
Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 514 (falt i det fri)
A simple liqueur sorbet built on ready-made strawberry fruit ice. Erken stresses that the liqueur must never be added before the sorbet is frozen, but at the last moment.
Stir in wine and liqueur
Stir the wine and curaçao into the half-frozen strawberry ice.
Refreeze
Freeze the mixture again for a few minutes, until it is just barely firm but still drinkable.
Serve
Serve at once in flat glasses.
Amounts converted: "1 glass" curaçao ≈ 0.5 dl, "1/2 del." Sauternes ≈ 0.5 dl. The freezing machine is replaced with an ice cream maker/freezer.
