Strawberry Bowle

Erken's strawberry bowle (a wine punch) from 1914: strawberries steep in a cooked sugar syrup for 5–6 hours, chilled Rhine wine is added, the mixture is strained, and it is topped up with champagne or seltzer at serving.

About the dish

From the chapter "Wine-making, liqueurs etc." in Stor kokebok (1914). Bowles of wine and berries with soda water or champagne were common party drinks in middle-class homes, and Erken gives a whole series of variants according to the season's berries and fruit.

How to make it

    Put the berries in a bowl

    Clean the strawberries and place them in a large bowl.

    Boil the sugar syrup

    Boil water and sugar together for 5 minutes and pour the hot syrup over the berries.

    Let it steep

    Let the berries steep in the sugar syrup for 5–6 hours in a cool place.

    Add the wine

    Pour in the ice-cold white wine and strain the mixture.

    Serve

    Just before serving, add champagne or seltzer. Serve ice-cold.

Changes from the original

Measurements modernized: "del." is interpreted as deciliters and "fl." as a 0.75 l bottle. Quantities that were illegible in the OCR (fractions) are reconstructed from Erken's usual proportions. The language of the method is modernized, but the method is unchanged.
