About the dish

A decorative way of serving from Erken's ice cream chapter: the shell of the citrus fruit is used as a cup for ice cream made from the same fruit.

How to make it

    Open the fruit

    Cut a round lid off the top of each fruit.

    Empty the fruit

    Carefully scrape out the flesh with a teaspoon, so the shell stays whole. The flesh can be used for the ice cream.

    Fill and serve

    Fill the shells with mandarin or orange ice cream, put the lid back on and keep them cold until serving.
