Original 1914 recipe

Erken places the battered carrots among her many ways of varying boiled root vegetables - here deep-fried in a simple batter of butter, flour, milk and egg, served with parsley sauce.
The batter
Melt the butter, stir in the flour, thin with the milk and bring to a boil. Cool the batter.
Eggs
Stir in the egg yolks, and finally fold in the stiffly beaten egg whites.
The carrots
Boil the carrots tender, split them in two or four lengthwise depending on thickness, and cut them into about 5 cm long pieces.
Deep-frying
Place a few pieces at a time in the batter, lift them out with a spoon and put them in boiling lard (about 180 °C (355 °F)), so hot that the fat steams. Fry them a nice light brown.
Serving
Place them on kitchen paper and serve at once with parsley sauce.
Measurements converted to modern units (deciliters, grams). 'Lard' is retained, but neutral frying oil is mentioned as an alternative. Frying temperature is given in degrees.
