Whisk eggs and sugar
Whisk the eggs and sugar for half an hour.
Stir in the flour
Stir in the ginger and the sifted wheat flour, with the potash mixed into it.
Shape and bake
Place the batter in small dollops on a greased baking sheet. Bake at a moderate heat, not too strong.
