Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Festive whiting gratin from Erken 1914: whiting fillets rolled around fish forcemeat mixed with boiled vegetables, laid in a greased dish with chopped onion and a brown tomato sauce with mushroom, mirepoix and sherry, and steamed tender in a moderate oven about 30 minutes. Variant with a forcemeat layer at the bottom and lobster ragout in the center, served with lobster sauce.

A more festive whiting dish from the fish chapter of 'Stor kokebok' (1914), in the French gratin style with brown tomato sauce, mushroom and sherry. Erken also gives a variant with fish forcemeat as a base and lobster ragout in the center.
Salt the fillets
Clean the fish, cut out the fillets, sprinkle a little salt over them and let them sit a quarter of an hour. Wipe them dry.
Fill and roll
Mix the fish forcemeat with a little finely chopped, boiled vegetables. Place the forcemeat on the fillets and roll them up tightly.
The sauce
Brown butter and flour together and thin with the broth. Let the sauce simmer at least 1 hour, add tomatoes and 60 g mirepoix, and strain it.
Finish the sauce
Steam the chopped mushrooms in butter and oil until all moisture has evaporated. Bring the sauce back to a boil, add the sherry and the mushrooms, and season with salt, pepper and parsley. Mix well.
Assemble in the dish
Grease a gratin dish, sprinkle over the chopped onion and place the fish rolls in it. Cover with the sauce. Variant: instead, place a finger-thick layer of fish forcemeat in the dish and set the fish rolls as a ring around it.
Gratinate
Put the dish in a not-too-hot oven (about 175 °C (345 °F)) half an hour before plating, so the fish steams itself tender.
Serving
If fish forcemeat is used as a base, lobster ragout is placed in the center and lobster sauce is served alongside.
Measurements modernized (tablespoons/teaspoons to tbsp/tsp, 'del.' to dl, 'gr.' to g). Unclear OCR for the broth amount is interpreted as 1½ l brown broth and 'del. sherry' as 1 dl sherry. Oven temperature is given (about 175 °C (345 °F)) where the original says 'a not-too-hot oven'. 'Vegetables' is specified as finely chopped boiled root vegetables.
