Halibut, boiled (flétan cuit)

Erken's boiled halibut (1914): pieces of halibut are pre-salted for half an hour, placed in boiling salted water (optionally half milk) and simmered slowly until tender. Served on a platter with a napkin, parsley and lemon, with melted butter, hollandaise, caper sauce or white wine sauce.

About the dish

A simple basic recipe for boiled halibut in the fish chapter. Erken emphasizes that the fins of halibut, as on turbot, are considered a delicacy and should not be cut away, and that the fish loses both in appearance and flavor if boiled in too much water or too vigorously.

    Prepare the fish

    Preferably buy a piece from above the tail. Cut the fish free from skin and bones and divide it into neat pieces. Do not cut off the fins; they are considered a delicacy.

    Pre-salting

    Sprinkle the fish pieces lightly with salt and let them stand for half an hour.

    Cooking liquid

    Bring water to a boil with 1 tbsp salt per liter. If the fish is not completely white, half of the water can be replaced with milk.

    Cook the fish

    Add the fish once the water boils. Skim off foam when it returns to a boil, and let the fish simmer slowly until tender. It must not boil hard or in too much water.

    Plating

    Lift the fish onto a platter lined with a napkin and garnish with parsley and lemon. Serve melted butter, hollandaise, caper sauce or white wine sauce alongside.

Changes from the original

The amount of salt in the cooking water has been reduced to a modern level (the original's «1 dl. salt to 1 l. water» is a very strong brine); measurements have been modernized, cooking time is estimated, and the method has been divided into steps. Milk may be used for half of the cooking liquid as in the original.

Fisken anrettes paa på varmt fat med serviet og pyntes med persille og citron. sitron. Som saus serveres smeltet smør, hollandsk saus, kaperssaus eller hvitvinsaus.
