Hamburger Steak

Erken's hamburger steak from 1914: this is not ground beef but pan-fried slices of beef from the round or tenderloin, topped with chopped pickle, capers, red-currant jelly and, optionally, a poached egg.

About the dish

Hamburger steak in Erken's sense is not ground meat but slices of tender beef fried in a pan and garnished with pickle, capers, red-currant jelly and usually a poached egg.

How to make it

    Prepare the meat

    Pound the piece of meat while it is whole, then cut it into slices across the grain.

    Fry

    Brown the butter in a hot pan, put in the slices and fry them quickly. Salt and pepper after they have been turned.

    Garnish

    Put a little finely chopped pickle, capers and red-currant jelly on each piece.

    Egg

    If desired, place a poached egg on top of each piece and serve at once. The egg can also be omitted.

Changes from the original

Measurements are converted (teaspoon/tablespoon to tsp/tbsp), "forlorne egg" is explained as poached eggs, and the number of eggs is estimated at one per serving. The jam is specified as red-currant jelly as the original recommends.
