Original 1914 recipe

Génoise cake with three kneaded shortcrust layers baked light brown, put together with a cooked vanilla cream of cream, flour, powdered sugar and egg yolks, and covered with icing or whipped cream.

Knead the dough
Quickly knead the flour, cold butter, sugar and egg together while cold. Let the dough rest ½ hour.
Roll and bake
Roll the dough out into two or three round layers. Place them on a greased sheet and bake them light brown in a hot oven, about 200 °C (390 °F).
Cook the filling
Whisk the cream, flour, powdered sugar, egg yolks and vanilla sugar together cold. Set over the heat and bring the mixture to a bare boil while stirring.
Cool the filling
Pour the cream out and stir it until it is cold.
Assemble
Spread the cream between the layers and cover the cake with icing or whipped cream.
Quantities are given in modern units (dl for cream), "flormelis" as powdered sugar and "hot oven" as approx. 200 °C (390 °F). The method has been divided into numbered steps.
