Revised 1949 recipe
From the revised edition of the Big Cookbook.

Salted fish fillet is poached and arranged with a sauce of crab fat, butter, flour, stock and milk-cream, alternating with crab meat. From Erken's Stor kokebok (1949), p. 126.
Source: Henriette Schønberg Erken, Stor kokebok, 1949-utg. s. 126 (falt i det fri)
Erken writes that the dish can well be prepared on Saturday if it is wanted for Sunday dinner. Lobster or prawns may be used instead of crab.
Salt the fish
Wash the fish and cut it into fillet pieces. Rub them with salt mixed with a little vinegar and leave for 1½ hours.
Cook the fish
Cook the fish in the boiling water, covered, for about 10 minutes.
Make the sauce
Save all the fat from the crab. Cook it together with the butter and flour and thin with fish stock and cream. Season with sugar, pepper and crushed rusk.
Arrange
Lay the fish on a buttered serving dish and pour the sauce over, alternating with the crab meat. Sprinkle finely chopped parsley over everything.
Measures converted (3/4 kg = 750 g, dd. = dl, 1 knivsodd = 1 pinch). Crushed rusk is in the ingredient list but not in the method; it has been added to the sauce.
