How to make it

  1. 1

    Mix the filling

Mix the cooked, flaked fish (or the fish balls) with neatly cut cooked celeriac, cooked peas, cooked potatoes cut into small pieces, and finely chopped parsley.

  2. 2

    Fill the shells

Place a lettuce leaf in the bottom of each shell, fill with the mixture and pour the sauce over.

  3. 3

    Make the sauce

Stir the egg yolks with the salt for 10 minutes. Add the oil drop by drop, then the vinegar and the cream. Stir in the mustard and pepper.

  4. 4

    Garnish

Garnish the shells with finely shredded lettuce or cress. Note: the sauce is made with raw egg yolks, so use fresh eggs and serve it cold.
