Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Fresh herring, deboned and each stuffed with an anchovy, brushed with egg and milk, breaded in rusk crumbs, rye flour and salt, and fried golden in butter. Served with mashed potatoes, vegetables and butter or a sweet-and-sour sauce.

A more festive take on fried herring, where the anchovy is tucked into the cavity left by the backbone and lends salty depth to the rich fish.
Clean the herring
Clean and wash the herring, remove the backbone, rinse the fish quickly again, and pat it thoroughly dry.
Insert the anchovy
Place a cleaned anchovy inside each herring where the backbone was.
Bread the herring
Beat the egg and milk together. Turn the herring in the egg mixture, then in the combined rusk crumbs, rye flour and salt.
Fry
Fry the herring golden brown in hot fat or browned butter.
Serve
Serve with butter or a sweet-and-sour sauce, mashed potatoes and vegetables.
"Ground rusk" is modernized to crushed rusk crumbs/breadcrumbs and given in deciliters. The fat is given as butter or a neutral frying fat. Other amounts are unchanged.
