How to make it

  1. 1

    Make the mixture

Whisk the eggs well. Stir in the milk and seasoning. Pour the mixture into a well-greased ovenproof dish. For a stronger flavour you can add grated cheese, anchovies or chopped smoked ham, depending on what the custard is to be used for.

  2. 2

    Cook in a water bath

Cook in a water bath for about ¼ hour, or until it has only just set. It should not rise and should not brown, and the water must not boil.

  3. 3

    Or bake

If baked in the oven, that is without a water bath, it takes 20–30 minutes.

  4. 4

    Serve

When cold, it can be cut into squares or strips and served in soups. Eggestand can also be cooked in small, greased timbale moulds in a water bath.
