Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Egg-white water for invalids: beaten egg white, 2.5 dl water, 1 tsp sugar, and strained lemon juice shaken together in a bottle and poured foaming into a glass.

A light, protein-rich drink from the invalid-cookery chapter. Lemon was added only "if allowed," that is, if the doctor approved it for the invalid.
Beat the egg white
Beat the egg white lightly.
Mix
Mix the beaten egg white with the water, sugar, and the strained lemon juice.
Shake
Pour the mixture into a clean bottle, put in the cork, and shake well.
Serve
When the drink foams, pour it into a glass and serve.
Measurements converted to deciliters. Lemon juice given as an optional amount, as the original implies.
