Diplomat sauce (sauce diplomate) from Erken 1914: a roux-based sauce of 40 g butter and flour thinned with chicken stock and cream, simmered 10 minutes and finished with lobster butter, anchovy butter, shellfish (shrimp, crayfish or lobster) and finely sliced truffles.
Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 340 (falt i det fri)
Diplomat sauce is one of the most luxurious sauces in the chapter, with lobster butter, anchovy butter, shellfish and truffles. It belongs to the French-inspired festive sauces Erken includes for finer occasions.
Make the roux
Stir the butter and flour together and thin with the chicken stock and cream.
Simmer
Let the sauce simmer for 10 minutes.
Season to taste
Stir in lobster butter, anchovy butter, shrimp, crayfish or lobster, and finely sliced truffles.
Measures are modernized (1 del. = 1 dl, teske = teaspoon). The amount of chicken stock is interpreted as ½ liter based on the OCR text, and shellfish/truffles are left without amounts, as in the original.
