Chateaubriand from Erken's Stor kokebok 1914: beef tenderloin in thick slices, pounded, seasoned and quickly seared in a hot pan or grilled over embers, served with balls of butter rolled in finely chopped parsley.

About the dish

One of several steak variations in the meat chapter of «Stor kokebok». In 1914 Chateaubriand was a French-inspired festive dish of beef tenderloin, served with seasoned butter.

How to make it

    Prepare the meat

    Pound the meat and cut it into thick slices across the grain. Season with salt and pepper.

    Sear or grill

    Sear the slices quickly in a very hot, dry pan greased with a little butter, 4–5 minutes on each side, or grill them over embers. Turn the meat with a carving knife and shake the pan often.

    Parsley butter

    Roll balls of the butter and roll them in finely chopped parsley.

    Plating

    Place the meat on a warm platter and set a butter ball on each piece. Serve at once.
