About the dish

A short instruction in the chapter "Hot and cold small dishes," where Erken shows how puff pastry can be shaped over scallop shells to make crisp shells for hot appetizers. The filling could be varied according to what the house had of fish, vegetables or meat.

How to make it

  1. 1

    Prepare the shells

Lightly grease the backs of clean scallop shells with butter.

  2. 2

    Lay on the dough

Roll the puff pastry out thin and lay it over the backs of the shells. Prick the dough with a fork.

  3. 3

    Bake

Bake the shells a light golden brown in a hot oven, about 200 °C (390 °F), for 10–15 minutes.

  4. 4

    Loosen

Carefully loosen the puff-pastry shells from the molds a couple of minutes after they come out of the oven.

  5. 5

    Fill and serve

Fill the shells with hot fish, vegetable or meat ragout and serve at once.

Changes from the original

The stated amount of puff pastry (not given in the original) is set as an estimate in grams; "skjæl" is modernized to scallop shells, and the baking temperature is given in degrees since the original only says "hot oven."

Frequently asked questions

How do I form the puff-pastry scallop shells?
Roll the puff pastry out thin and lay it over the backs of lightly greased scallop shells (or shell molds). Prick the dough with a fork before baking so it doesn't puff up.
How long and at what heat should they be baked?
They are baked in a hot oven until light golden brown. Figure a short baking time – the whole dish is estimated at about 40 minutes including rolling out.
When should the dough be loosened from the shells?
Wait a couple of minutes after they come out of the oven, then loosen them carefully – they are fragile while hot.
What can the shells be filled with?
Erken suggests a fish ragout, vegetables or a meat ragout. The filling is placed in the finished baked shells.
