About the dish

This is a dessert cake made from a rich yeast dough worked in several stages. Erken counts it as serving 12.

How to make it

  1. 1

    Make yeast dough

Sift the flour and set ⅓ aside. Make a well in the middle of the flour, put in the yeast and mix with a little lukewarm water to a soft dough. Cut a cross in the dough, cover and put in a warm place.

  2. 2

    Work in eggs

Make a well in the flour and put in the salt, sugar, milk, 125 g butter and 4 eggs. Work together from the middle, drawing in the flour little by little. When the dough is smooth, put 1 egg in a well, work it in, and continue until all the eggs are used.

  3. 3

    Combine doughs

Stir the rest of the butter with 180 g flour and work it into the dough little by little. Combine the doughs in small portions until all is smooth. Then work in the yeast dough, which should have doubled.

  4. 4

    Let it rise

Cover the dough and let it rise, ideally for 12 hours. After 4 hours' rising you can add 60 g butter stirred quite soft.

  5. 5

    Shape and bake

Put the dough in a well-greased tin only ⅔ full. Let it rise in a warm place to the rim. Brush with melted butter and bake in a not-too-hot oven (about 180 °C (355 °F)) until done.

  6. 6

    Sprinkle and serve

Turn the cake out and sprinkle with a somewhat warm, not boiling, mixture of liqueur, sugar and water. Glaze the cake. Serve cold, filled in the centre with ice cream or fruit compote with cream.
