About the dish

A small, thrifty bread dish in the dessert chapter, where stale white bread is soaked in milk, layered with currants, and gratinated with a rusk topping and melted butter.

How to make it

  1. 1

    Soak the bread

Remove the crust from the stale white bread, cut it into slices, and soak the slices in the milk for about 30 minutes.

  2. 2

    Fill the dish

Layer the bread slices in a greased dish with the cleaned and blanched currants between the layers.

  3. 3

    Egg mixture

Whisk the egg with sugar and cream and pour the mixture over the bread.

  4. 4

    Topping

Sprinkle crushed rusk over and drizzle the melted butter over the top.

  5. 5

    Bake

Bake the pie in the oven at about 175 °C (345 °F) for 30–35 minutes until it is golden and cooked through.

Changes from the original

Measures are converted to modern units (1¼ dl cream, 2.5 dl milk). Rusk is kept, but can be replaced with breadcrumbs. The original gives no baking time; about 30–35 minutes at 175 °C (345 °F) is estimated from the other bread puddings.

Frequently asked questions

Why must the bread be soaked in milk first?
Stale white bread is dry. The crust is removed, the bread is cut into slices and soaked in ¼ liter of milk for half an hour, so that the pie becomes moist and soft.
What is meant by blanching the currants?
The currants (20 grams) are cleaned and quickly rinsed/scalded in boiling water. This makes them clean and slightly plumped before they are layered between the bread slices.
How is the pie assembled?
The bread slices are layered with currants in a greased dish. One egg is whisked with 30 g sugar and 1¼ deciliters of cream and poured over. Sprinkle 10 g crushed rusk over and drizzle on 30 g melted butter before baking.
How old is the recipe?
It is from Henriette Schønberg Erken's «Stor kokebok» from 1914, page 464, and serves about 4 with around 80 minutes total time.
