Raw cauliflower in salad is typical of the raw-food wave of the 1930s and 1940s. Here it is combined with tomato and a fresh dressing.
Make the dressing
Stir rhubarb juice, oil and grated Brazil nut together.
Mix the salad
Mix the finely chopped cauliflower with the chopped leek and toss in the dressing.
Serve
Lay the tomato slices on the dish and arrange the cauliflower salad over or beside them. Garnish with cress.
The original does not say how the salad is assembled; the order of the steps is interpreted from the ingredient list. 'Cress' is treated as a garnish.
