Erken's method for soft-boiled eggs 1914: clean, fresh eggs are lowered in a basket into boiling water that covers them, boiled 3–3½ minutes from the return to a boil, dipped in cold water and served in an egg cozy or napkin.

Erken gives thorough guidance on boiling eggs; fresh and clean eggs were not a given before the age of the refrigerator, hence the washing instruction with vinegar water or salt.
Wash the eggs
Wash the eggs in thin vinegar water, or rub them with table salt moistened with water.
Boil
Place the eggs in a colander or a wire basket and lower it into a suitably sized pot with just enough boiling water to barely cover the eggs.
Time it
Reckon 3 to 3½ minutes of boiling from the moment the water comes back to a boil.
Serve
Take the eggs up at once, dip them for a moment in cold water and serve them in an egg cozy or in a folded napkin.
Washing the eggs has been kept as a historical detail, but is not necessary with today's eggs. Measures and times are unchanged.
