About the dish

Blood bread was a way of preserving slaughter blood for a long time, and Erken calls it "an invaluable help to have in times of crisis".

How to make it

  1. 1

    Mix the dough

Mix blood, salt, yeast and rye flour into a smooth dough. Put it in a greased, floured tin; it should be only half full.

  2. 2

    Rise and bake

Let the dough rise for about half an hour. Bake in a not-too-hot oven (about 175 °C (345 °F)) for 1 hour and turn the loaf out of the tin.

  3. 3

    Dry the slices

When the bread is cold, cut it into slices and dry them at low heat.

  4. 4

    Use

The dried slices are used for pancakes, puddings, klubb and lapper.

Changes from the original
