Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Candied orange peel (Erken 1914): peel soaked 4 days, pricked and boiled tender, weighed and candied in a syrup of equal parts sugar and peel over several days; the syrup is boiled down at the end and the jars tied over the next day.

From the preserving chapter of "Stor kokebok" (1914); the recipe begins on page 583 and continues on page 584. Candying orange peel made use of an ingredient that was otherwise thrown away, and the result was used as dessert and cake decoration.
Soak the peels
Place the orange peels in cold water and let them lie for 4 days.
Prick and boil tender
Prick the peels with a needle. Put them over the heat in boiling water so it just covers them, and boil until they are tender.
Cool and weigh
Place the peels immediately in cold water. When they have cooled, lay them out on a cloth and weigh them. Take 1 kg sugar per kilo of peel.
Pour over syrup
Moisten the sugar with water and boil it into a syrup. Pour the syrup over the peels and let it stand for 4 days.
Boil down the syrup
Pour off the syrup and boil it until smooth. Pour it over the peels again and let it stand a few days.
Final boiling
Pour everything into the preserving pot and boil for 5 minutes. Take out the peels, boil the syrup down for 15 minutes and pour it over the peels.
Tie over
Tie over the jars the next day.
The ingredient list is reconstructed from the ratio in the text (1 kg sugar per kg peel), since the original has no list of its own. The method is divided into steps and the language modernized.
