One of Erken's thickened vegetable soups from the soup chapter of 'Stor kokebok' (1914). 'Alliance' refers to using a mixture of whatever root vegetables you have on hand.

How to make it

    Cook the vegetables

    Clean the root vegetables and cut them finely. Stick the two cloves and the bay leaf into the peeled onion. Put everything into the stock along with the parsley and cook until the roots are tender.

    Strain the stock

    Strain the stock. Save the root vegetables; they are to be served in the soup.

    Thicken the soup

    Melt the butter, stir in the flour, and thin with the hot stock little by little. Let the soup simmer for 10 minutes.

    Plating

    Season with salt. Place the root vegetables in the soup tureen and pour the soup over. Meatballs, egg dumplings, or cooked asparagus may also be served in the soup.
