About the dish

Erken's classic vanilla pastry cream for layer cakes, used among other things in the Georgina cake on the same page.

How to make it

  1. 1

    Whisk the egg mixture

Whisk the egg yolks and powdered sugar until pale and fluffy — the original says a quarter of an hour; with a mixer, 5 minutes is enough.

  2. 2

    Combine

Stir in the flour, the vanilla bean (the seeds and the pod), and the cream.

  3. 3

    Cook the cream

Set the mixture over low heat and bring it to a boil, stirring constantly, until the cream is smooth and thick. Remove the vanilla bean and cool while stirring.

Changes from the original

Measures converted to deciliters and grams; the whisking time can be greatly shortened with an electric mixer. Clarified that the cream should be cooked gently or in a water bath so the eggs don't curdle.

Frequently asked questions

How long should the egg yolks and sugar be whisked?
For about 1/4 hour (15 minutes), until the mixture is pale and fluffy. Then the flour, vanilla, and cream are stirred in.
How do I keep the cream from curdling or getting lumpy?
The cream must cook while stirring constantly until it is smooth. Use moderate heat and stir the whole time — that way the flour and egg yolks thicken evenly without curdling.
What are the ingredients, and what is the cream used for?
6 egg yolks, 125 g powdered sugar, 25 g all-purpose flour, 1/2 vanilla bean, and 1/2 liter of cream. The cream is used as a filling for layer cakes, and the recipe is from Henriette Schønberg Erken's "Stor kokebok" (1914), p. 522.
Can I use vanilla sugar instead of a vanilla bean?
The recipe calls for 1/2 vanilla bean, which gives the best flavor when the seeds and pod are cooked into the cream. Vanilla sugar can be used as a substitute, but the flavor will be less full.
