About the dish

A fine little appetizer from the fish chapter of "Stor kokebok" (1914), where cod liver was put to use in French-inspired quenelles. Served in sauce piquante — a tart, spiced brown sauce.

How to make it

    Prepare the liver

    Wash the liver well, dry it and chop it finely.

    Mix the forcemeat

    Mix the liver with the grated bread and the parsley. Add the beaten egg yolks, just enough that the mixture binds well together without becoming too moist. Season with salt and pepper.

    Shape and poach

    Shape small dumplings from the mixture and let them gently poach in lightly salted water or fish stock for 10–15 minutes. The water must not come to a rolling boil.

    Serve

    Lift the dumplings out carefully and serve them in sauce piquante.
